Between work, a baby, and a hungry husband. I am always desperatly looking for something quick and easy to make for dinner.

So the other day while talking about recipes with some of the guys here at Fox 4 I realized how fun it could be to get recipes from others. I love cooking and don't always have a ton of time to do something fancy so if you have ideas you would like to share please do.

I will start.

It's called Chicken Stay-Warm it takes a few hours but is YUMMY!!! My Aunt Anita from New York got me hooked and I hope you enjoy as much as my family does.

CHICKEN STAY-WARM
1 can of chicken soup
1 can of cream of celery
1 can of cream of mushroom
1 1/2 cups of Uncle Bens Rice (DO NOT USE MINUTE RICE)
10 green onions (chopped)
2 large green peppers (chopped)
1 stick of butter

Put in greased baking dish. Lay chicken breast on top of mixture and then pour melted butter on top. Salt and pepper.
Bake uncovered for 2 1/2 hours at 250 degrees. Turn chicken to brown. THAT IS IT !!!

OHHHHHHHHH, what to be??? It's the yearly question that races thru my head everytime I see the first
announcement about an upcoming Halloween Party.

Do you go for the traditional witch, or maybe a princess, or even a ghost. With Halloween just weeks away
the shelves at the stores are evident a lot of people are already trying to find this years perfect custome.

This is my first year with a youngster to take trick-or-treating. In fact, his costume was picked before he
was even born. My husband and I found an adorable lion costume and bought it immediatedly. So a few weeks ago,
over an adult beverage I came up with the idea.

My son will be a lion, what better costume for the rest of the family then the Wizard Of Oz. And there it was decided.
My husband will be the Scarecrow, Grayson a Lion, and me Dorothy. But what about our adorable four legged friend Quincy. My idea
Toto of course, but my husband nixed that idea. So with some foil paper, a funnel, and a coller Quincy was transformed into
the Tinman.

I can't tell you how much fun we have had the past couple of weeks dressing up (yes, already) all in preparation for our Halloween photos (yes, Halloween photos)

I just hope you all have a Happy Halloween because we definitely will.

Between dirty diapers, feedings, and the constant entertaining I still find time to come to work to put in nearly 10 hours day. Still I would not trade motherhood or my job for the world.

Just 6 months old, and already I can't remember my days before Grayson.

I look at him and smile... just looking at his picture on my desk makes me break out in song (not songs you would hear on the radio, but Itsy Bitsy Spider, And Jesus Loves The Little Children).

I am humming right now. I have to admit the best way to describe life now is: A BALANCING ACT.

A balance between work, between being a good mom, and a good wife, and trying to be good at my job. I can't help to feel like sometimes I am falling short.

And then something comes over me, right around 10 p.m., my story is about to run, it's actually done and is about to make it in the appropriate time slot, I race to the car, speeding down the highway, praying when I get there my son is not too tired to shoot me one of those cute grins that just lights up my soul.

As I swing open the door and there he is waiting I realize I may not be perfect in all that I do.. but ... SO WHAT.
